I’ve had my eye on cinnamon chips for a long time now but hadn’t gotten around to buying them. The thing that finally made me pull the trigger on the purchase was my friend Rebecca’s beautiful (no-knead!) cinnamon English muffin bread which is loaded with the cinnamon chips.

As soon as I saw that recipe in all of its buttery toasted goodness, I finally bought the cinnamon chips. I purchased mine on Amazon but they are also available at Walmart, and perhaps your local grocery store. I’m here to tell you, that bread recipe is a winner, and so are these cookies.

About These Cinnamon Cookies

  • Lots of cinnamon flavor! Cinnamon crinkle cookies taste like a cinnamon roll in cookie form: sweet, chewy and full of great cinnamon flavor. I love the cinnamon flavor throughout these cookies thanks to ground cinnamon but the real gems are the cinnamon chips, little bold morsels of cinnamon that give you a burst of warm cinnamon flavor.
  • Easy to make. The dough comes together like a typical cookie dough: cream the butter and sugar, mix in the dry ingredients and then stir in those magical cinnamon chips. Roll the dough into fairly small sized balls and then give them a good coating of powdered sugar. Once that’s done, all that is left to do is bake, and boy, do they smell wonderful!

Make It Your Own

  • Vary the baking chips. If you like, substitute another type of baking chip for the cinnamon chips. These cinnamon cookies are great with chocolate chips or white chocolate chips. The combination of cinnamon and chocolate will remind you of Mexican hot chocolate (be sure to try my Mexican chocolate shortbread cookies, too!).
  • Add sparkle: Roll the cookies in granulated sugar instead of powdered sugar. Try rolling them in cinnamon sugar to make triple cinnamon crinkle cookies!
  • Make ahead idea: Prepare the cinnamon cookie dough ahead of time, wrap it securely and refrigerate for a day or two. When you want to make the cookies, roll the balls and continue with the recipe as directed.

Storage Tips

Once the cookies have completely cooled, store them in an airtight container for up to a week. They can be frozen for up to a month.

These double cinnamon crinkle cookies are easy to make and taste just like a cinnamon roll in cookie form!

Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • teaspoon baking soda
  • ½ cup cinnamon chips
  • ½ cup powdered sugar, for rolling the cookies

Instructions

  • Preheat oven to 350°F.

  • In a stand mixer, combine butter and sugar and mix on medium speed until combined and light in color. Add vanilla and egg and beat again until combined.

  • In a medium bowl, mix together flour, cinnamon, salt, baking powder and baking soda.

  • Add dry ingredients to wet ingredients and mix until just combined. Stir in cinnamon chips by hand.

  • Roll into small balls (1 to 2 tablespoons each) and then roll the balls in powdered sugar until coated. Place on a parchment paper lined baking sheet.

  • Bake for 9 to 11 minutes or until no longer shiny. For best resutls, don’t overbake the cookies. They're best when they're chewy.

  • Cool for 5 minutes on the baking sheet before removing the cookies to a wire rack to cool completely. Store in an airtight container.

Notes

  • If you prefer, substitute chocolate chips or white chocolate chips for the cinnamon chips.
  • The cookies can be rolled in granulated white sugar or cinnamon sugar for variation.
  • Yield depends how large you make the cookies.

    Good cookies but the recipe is incomplete. No instructions on how long to leave cookies in the pan. Also I had to turn my oven up to 375 for an additional 6 minutes in order to bake properly.

      Thank you for the feedback! Have you considered adding a thermometer to the inside of your oven? Sounds like it may run on the cold side.

    I had never used cinnamon chips before, but wanted to try since chocolate tends to aggravate my daughter’s reflux. The chips and these cookies are delicious!
