How to Make Easy Chicken Pot Pie on a Stove Top

Aunt Lou here.

We love the crock pot version of this recipe, so I thought we should give it a try on the stove! And now you have this delicious Easy Chicken Pot Pie recipe for your stove top!

I love that this recipe is less than an hour (barely over 45 minutes) from start to finish. It means I can get dinner on the table even if the day happens to be quite chaotic! Even better, my two kids (currently ages 9 and 6) gobble up their carrots and peas without batting an eye. Not a single complaint! You can’t beat that!

We like to use the largest size of refrigerated biscuits. I also like to use the flaky style biscuits. You can use whatever your personal preference is for this recipe. However, I prefer to use the large flaky ones because, to me, they mimic a lovely flaky crust perfectly!

Instructions

  • Put everything, except your corn starch, water and biscuits, in a large pot, stir, cover and cook on medium high heat until your ingredients reach a boil.

  • Preheat your oven while waiting for your ingredients to come to boil and bake your biscuits per the instructions on the tube.

  • In a small bowl, mix together your corn starch and water with a fork or small whisk.

  • Once your ingredients come to a boil, remove the lid and stir in your cornstarch slurry. (I used a stirring spatula to make sure I got all of the slurry out of the bowl and into the pot.)

  • Leave the lid off and keep your ingredients at a boil, stirring frequently for 10 minutes.

  • Remove your pot from the heat and let stand for 10 minutes.

  • Place a biscuit in a bowl and spoon the contents from your pot over the biscuit.

FAQs

What is the sauce made of in chicken pot pie? ›

The sauce in chicken pot pie is typically a gravy. I use a seasoned white gravy made from scratch with flavor-building ingredients, chicken broth, and half-and-half.

How do you keep the bottom crust of a chicken pot pie from getting soggy? ›

Brush the Bottom with Corn Syrup or Egg White

Coating the inside surface of the bottom crust will create a barrier to prevent sogginess.

Can you put frozen chicken in crock pot? ›

Information. It is best to thaw meat or poultry before putting it into a slow cooker. Frozen pieces will take longer to reach a safe internal temperature and could possibly result in foodborne illness. Frozen or partially frozen foods can also cool everything else in the slow cooker.

Should I bake the bottom pie crust first? ›

But the one surefire way to make certain your pie's crust will be golden brown, crisp, and delicious — just as appealing as its filling — is to prebake it. That's right: bake the bottom crust first, before adding the filling.

Why do you not use a bottom crust on chicken pot pie? ›

I only gave my pot pie a top crust, because I feel like the bottom crust always gets soggy. If you do want to add a bottom crust, I suggest blind baking it. What does blind baking mean? It's when you bake your pie crust without a filling in order to crisp it up.

Should I egg wash the bottom pie crust? ›

You've spent time and effort putting the pastry together, so don't sell yourself short by skipping the final step—the egg wash for the pie crust. The truth is that cream and egg washes are a simple but vital step to improving the appearance and flavor of pies and other baked goods.

Should you poke holes in bottom of pie crust? ›

With docking, the holes allow steam to escape, so the crust should stay flat against the baking dish when it isn't held down by pie weights or a filling. Otherwise the crust can puff up, not only impacting appearance but also leaving you with less space for whatever filling you have planned.

Why is my chicken pot pie bland? ›

Salt brings out and sharpens other flavors, so almost any food without enough salt will seem bland, no matter what else you add.

Why did my chicken pot pie come out watery? ›

A watery potpie may be the result of not cooking the filling for long enough or adding too much liquid to the filling. Another possible reason for the pie being watery is if you add watery vegetables like spinach or green beans to the filling rather than potatoes or carrots, which soak up liquid.

How do I thicken my chicken pot pie filling? ›

Adding flour to the chicken and vegetable mixture will set it up for becoming thick and creamy once you pour in the broth.

How long does it take for chicken to cook in the crockpot? ›

Sprinkle the chicken breasts with plenty of salt and pepper. Cover your crock pot and cook chicken breasts on low for 6-7 hours or on high for 3-4 hours. Chicken is done when the internal temp reaches 165 degrees F. Use chicken in your favorite recipes.

Can you cook frozen chicken in crock pot without liquid? ›

The instruction manual for Crock-Pot's 3.5-quart slow cooker not only advises increasing the cooking time when using frozen chicken, but also recommends adding 1 cup of warm liquid to "act as a cushion to prevent sudden temperature changes."

Should frozen chicken be on high or low in crock pot? ›

directions
  1. Spray inside of crock pot with cooking spray.
  2. Rinse chicken and place in cooker.
  3. Mix chicken gravy with water and wine.
  4. Pour over chicken.
  5. Cook on low approximately 6 hours.
  6. About 1 1/2 hours before end of cooking time add carrots and onions.

What is pan pan sauce? ›

Pan sauces, as the name suggests, are made in the exact same pan you've used to sauté shrimp, sear a steak, or brown some onions. After cooking your meat, fish, or vegetables, those little leftover particles stuck to your pan's bottom—called the fond—transform into a silk smooth sauce in a process called deglazing.

How do you thicken pot pie sauce? ›

If for some reason your sauce is not as thick as you want it to be, you can always use cornstarch as a thickener. Start with about a tablespoon, and dissolve it in a bit of water, and add it to the sauce. Cook over medium heat until your sauce begins to quickly thicken.

How do you thicken chicken pie sauce? ›

Just let it simmer for a few minutes until it thickens. But if you've already added the broth and realize it's too thin, you can always make a slurry to stir in. Stir a tablespoon of cornstarch into 2 tablespoons of cold water and add it to your filling mixture to thicken it.

What makes a pot pie a pot pie? ›

Today's Classics. Today's classic pot pies have a pie crust bottom and a flaky pastry top. They can be filled with just about anything, but classic fillings are made from things like chicken and beef, though some may also be made from seafood and poultry.
