Happy Ramadan everyone! To me this month is very special. As you know Muslims fast in this month which means no eating or drinking from sunrise to sunset. But there is more to it. It's not only about avoiding eating and drinking. It's also about avoiding bad thoughts, rage, anger, jealousy and any other bad features. This is the month when people practice to be kinder to each other. If it's done "right", fasting is actually good because it cleanses the body and mind as it's a practice and can change one's behavior.

If it's done "right", what do I mean by that? Food wise, I mean not over eating, choosing food groups that would help going through the day with enough energy, and not wasting food as it's just not a good thing to do. We all know how many people around the world are "still" suffering from hunger, right? So if we have it, I think we should be grateful for it.

For the meal before the sunrise, I usually eat a whole meal: mostly Persian dishes consisting rice, stew and some fresh salad, and of course I drink water and fresh fruit juice during Ramadan. For Iftar, I like to have something lighter than a full meal as I haven't eaten anything all day long and I don't want to shock my body by eating a lot or eating things that are not very healthy such as deep fried or super sweet food.

I usually go with bread and cheese, walnuts, hummus, some kind of fritters or frittata, some fresh fruit and definitely dates. All these in small quantity and in moderation through two to three hours. Sometimes I also make a light soup which is a nice change.

Like my Easy Irish Soda Bread, these easy garlic knots recipe are great for any time and any meal including Iftar. They are so easy to make as the dough is pretty standard and if you have a stand mixer with a dough hook, you will also save time and energy to knead it. I adapted the recipe from Pretty Simple Sweet and it is delicious! My maman and I made these garlic knots recipe when we were in Turkey. I love dipping this bread in soup, hummus, baba ganouch, marinara sauce, spread some brie on it, you name it.

Ingredients

  • 3 cups all purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 ¼ teaspoon instant yeast
  • 1 cup milk lukewarm
  • 3 tablespoon olive oil

To top:

  • ½ cup olive oil
  • 4 garlic cloves minced
  • 2 tablespoon dried thyme

Instructions

  • Start with making the topping, mix olive oil and minced garlic in a small bowl and set it aside so the oil is infused with garlic. You can do this step even days ahead.

  • Whisk flour, sugar, salt and instant yeast in a large bowl.

  • Pour in lukewarm milk (it should be warm enough but not hot) and olive oil. Start mixing with a wooden spoon and when the mixture has come together, use your hands to shape it into a ball.

  • Transfer the dough onto a lightly floured surface and knead until the dough is soft and bounces back when you poke it with a finger.

  • Transfer the dough back to the bowl and brush with olive oil. Cover and let it rise in a warm place for 90 minutes. Line two baking sheets with parchment paper.

  • After the dough has risen, gently press it down to remove excess air and then divide the dough into 20 pieces. Shape into a string and then make a knot. Place the knots on the baking sheets, cover and let them rise for another 45 minutes.

  • Meanwhile, preheat the oven to 350F.

  • Brush infused olive oil on the knots and sprinkle with dried thyme. Bake in the oven for 15 to 20 minutes until golden brown and fully cooked.

  • Serve with anything you like!

    How can the bread turn brown? I follow the recipe, but when my bread is fully cooked, the shell is still white.

I do wish I had taken it all oh I just can't forget the taste!!
