FAQs

Are green tomatoes safe to consume?

Yes! Some say that unripened tomatoes have compounds that might be toxic, but the amount is so small you’d likely not be able to eat enough in one sitting to feel the effects. There are some people who react more strongly to the acidity levels of unripened tomatoes so do keep that in mind. But nowadays, there are even varieties that are still green when fully ripe.

What should I line my pan with?

While the recipe calls for parchment paper, you can use a Silpat baking sheet instead, if you have one. (Silpat baking sheets are made of silicone and reusable. They’re great for gluten free baking. Silpat is a brand name; you can find off-brand options, too.)

Can I use other flours?

Absolutely! I love the taste and texture of almond flour, but you can use all-purpose wheat flour or a 1-to-1 gluten-free blend that’s meant to replace wheat flour directly.
