Hey there POPsters!!!

So today I was in a super chef mode and decided to cook my heart out! It was so relaxing just listening to nice morning songs on my speakers…I felt like I was in my own world. No texts or phone calls to bother me. It really was so fabulous!

The freedom to be creative happens when your mind and environment are not clogged up. Creativity requires room. Room to move. You need to clear your mind. Be worry-free! Make sure your space is clean! I always find that the condition of my apt. is a direct reflection of my inner state. This whole past week my apt. was a DISASTER!!!! I didn’t find myself to be too productive. But this morning, I woke up, shot straight out of bed and decided that today I was gonna clean up my act!

Clothes into the hamper, shoes back in the closet, counters wiped, dishes done…ahhhh I felt sooooo free and LIBERATED! Right then and there I opened the fridge to a stash of beautiful food. It was chop chop, mush mush time!

For a while, I’ve been wanting to make almond muffins soooooo bad but never got myself to do it. Well, I just bought a super cute heart baking pan from Homegoods the other day and have been DYING to use it. So now was the perfect time!

Here’s what I made: Paleo Almond Muffins. Please take a look 🙂

INGREDIENTS:

– 1 cup almond flour (I used trader joes brand)

– 2 ripe bananas

– 1/2 cup egg whites

– 1 Tablespoon almond butter (I didn’t have any so I used unsalted natural peanut butter which btw is not paleo)

– 1 Tablespoon Pumpkin Spice (you could also uses cinnamon)

– 1 pinch sea salt

Love my heart tin! Ready to mash it up! I kept the bananas a lil chunky on purpose.

At this point, I had no idea what these would taste like and was just hoping I didn’t waste a bunch of ingredients!!! Make sure to spray your tin with some oil so that the lil guys don’t stick after you take em out from the oven. I decided to make 2 Blueberry Bliss Muffins, 2 Almond Crunch Muffins, and 2 Cranberry Craze Muffins!

After about 10-15 min at 350F in the oven…this is how they look!

I let them cool for 10 min and then used a spatula to scoop my babies out! Which do you wanna bite right now?

Imagine those juicy berries bursting in your mouth alongside the warmth of the almond bread!

A look inside. Chock-full of goodness!

I had left over batter so I also made pancakes! Didn’t alter the recipe at all! And they were yums!

Hope you guys get a chance to make these! I absolutely loved them and I would love to see your almond muffins too! So tag #blogilates on instagram or tweet/facebook me so I can see!

Also! For those of you celebrating Lunar New Year…

It is 2013, the year of the snake! Do you know what your Chinese zodiac sign is? Who’s celebrating?

Live the idea of the flax bread and almond muffins (paleo). Is there any way to do these with an egg substitute? I’m sensitive to eggs!

I know you posted this a while ago, but I just recently stumbled on to your blog and this recipe looks delicious! I wanted to make these for a coworker who went paleo earlier this year. But when I googled whether or not almond flour is paleo, a bunch of reasons why it should be avoided. What is your opinion on this? Since coconut flour was suggested as a “better” alternative, I might try this recipe using that!

Sorry, but these are terrible! Mine came out soggy and sunk down after I took them out of the oven, and I followed the recipe exactly. They taste alright, but just fall to pieces when I try to eat one. Is there supposed to be baking powder or something in them?

Mine did to, but don’t give up! These are fantastic. 🙂 I started using a bit less banana more like 1 1/2 (and if I use frozen, heat them up then strain them) & fine ground almond flour. I’ve never made the muffins though, I’ve only done them as pancakes. Sometimes the center isn’t done, so I just pop them in the micro for 20 sec. DELICIOUS! Try them again, totally worth it. 🙂

I made it exactly the same way she did and found the same thing happen to me. SO, I simply left them in loner. I left them in for a good 18-20 minutes and man did those extra couple of minutes count. They hardened up then and were great! 🙂

Ah, these muffins look great, and awesome that I can enjoy with paleo in mind. It can be really tough to adapt to the healthy lifestyle choice completely, but it’s totally worth it. I couldn’t even hit my healthy eating stride until I first learned of the Paleo diet from In The Kitchen (http://truewebservices.com/InTheKitchen/paleo-cookbooks) but good, hearty recipes like these make this diet easy to maintain!

My husband is always craving for sweet stuff nut I want to keep him in a good shape, so I usually serve him apple dumpling (from Tim’s Paleo book http://timreviews.com/paleo-recipe ) – he’s addicted already and your almond muffin recipe would be a fantastic change. Thank you, I’m going to prepare your recipe this week (right now we have many guests, because of the lunar new year in Vietnam)

Cassey, could you make (or have you made) a blog post about how much exercise is recommended to lose weight, maintain, or lean out? Such as, how much cardio vs pilates should be done in a week? I’m starting clean eating and I’d like to lean out without losing weight, but not having a fitness background makes it difficult for me to balance out work outs. I have been playing around with cardio and pilates (30 minute pilates 3 days a week, 45 minutes cardio) and I saw decent results in 5 weeks from that but like I said, I have no fitness background. I tried following your calendar but I found that an hour a day was too much for me, and I wasn’t enjoying my workouts or sticking to them.

oh my, that’s so true! it makes me crazy too if my flat is in a mess! makes me all cranky and stuff. cleaning up and putting the things back where they belong is just so cathartic, haha 🙂

btw: i just peeled a banana with the upside-down method for the first time in my life, haha 🙂 i was like a little kid, looking at that banana all suspiciously, wondering-slash-doubting if it would actually work, haha:)
it did work! and it literally made me laugh bc it was so unfamiliar. 🙂

thanks for continually having me try new & unknown things:) it makes me see things from different angles every now and then, which is awesome bc this keeps me appreciating the little (but beautiful) things life offers.

Just inspired me to make some pancakes! Combined this recipe with your traditional banana pancakes since I didn’t have almond flour.

    – 1/2 banana
    – 1 egg
    – tablespoon oats
    – 2 tablespoons almond butter
    – 1 tablespoon almond milk
    – generous shake of cinnamon
    – shake of ground cloves
    – pinch salt

A couple of days ago I made muffins just like that, but with coconut and another version with hazelnut. Now I’m super excited to try this, with bananas…mmh! I love experimenting in the kitchen!

I also wanted to share that STEVIA is in fact not a natural sweetener! A chemical process takes place in order to gain the sweet powder. And this has nothing to di with the plant anymore. So I’m not sure if it’s THAT heathly… I also read that there is no evidence for health risk and that it may be a good substitution for people wth diabetes. However, it cannot be treated as a natural sweetener.

Hi Cassey! We’re celebrating the first day of new year right here in Vietnam !
So I know its Sunday, and its New Year, but I kinda over-indulged myself, therefore I decided to workout today. I did 20mins of cardio already, what do you suggest I should do next ?
And is it good if I workout on a rest day too? What sort of exercise should I do then ?
Thank you and Happy New Year 😀 ** sending greetings from Vietnam **

haha i don’t even know if there’s just something sold around here (i live in Brazil), but I’m willing to bet there’s something like that on every place with a whole foods market. Anyway, it’s really great cause it’s a kind of flour that doesn’t get absorbed (is it the same with almond flour?). It’s actually called green bananas flour.

Is it weird that I want to know what groceries you buy, how much you spend, and how often you go? Or even how you plan your meals out? My attempts to plan out my meals really only goes 3 days into the future and then I’m like “How do people do this for the whole week?” So I usually just buy a bunch of fruit and snack on it throughout the day. I always seem to run through my food WAY too quickly and I’m ALWAYS over budget. Really the key is eating the same foods everyday or preparing your meals in advance and I just never do that. Or I’m like “OMG Kraft mac n cheese is on sale for $0.50! Must buy 10!!”. Blabber post. Forgive me.

    TL:DR – I like grocery hauls. >_>

    FAQs

Why did my almond flour muffins sink? ›

Grain-free muffins can sink if you don't bake them long enough, if they have too much oil or moisture added, or if your baking powder isn't fresh. This recipe calls for only 1 tablespoon of oil since almond flour is already rich in healthy fats.

Why are my almond flour muffins crumbly? ›

Since almond flour is denser than traditional flours, the muffins can sometimes end up crumbly, dry and almost more like cornbread that has dried out rather than a soft, fluffy muffin with a crustier top.

What is a Paleo muffin? ›

What are the dark specks in almond flour? ›

While blanched almond flour is made with almonds without the skin, unblanched almonds are those that have the skin on. Because unblanched almond flour uses the whole almond, it has a red-brown color and darker brown specks throughout.

Do you need more eggs when using almond flour? ›

The other answers are all excellent, but I'll add that for baking cookies and simple things like muffins, you can replace one cup of wheat flour in the recipe with one cup of almond flour, and double the amount of eggs. Every fake flour is different, but that's what is recommended for almond flour.

Does almond flour need a binder? ›

Without the gluten as a binder, almond flour batters and doughs need a bit of firming up. Egg whites are a great binder that don't change the flavor. You can use whole eggs but the yolks add an eggy flavor that isn't always desirable.

Can I use baking soda when baking with almond flour? ›

Be sure to substitute the same amount a recipe calls for with equal parts of baking soda, apple cider vinegar, lemon juice, buttermilk, milk, or vinegar. Baking powder is another option since it is simply a combination of baking soda and acid.

Why can't you have peanut butter on paleo? ›

Peanuts are technically legumes, which are not paleo compliant, and that means peanut butter is off limits for paleo eaters. All other nuts and seeds are fair game, so if nuts and seeds are the only ingredients, snack away!

    Are bananas considered paleo? ›

Many paleo followers wonder if bananas are paleo because of their higher sugar content. They are considered paleo. One medium banana has 113 calories, 2 grams of fiber and 26 grams of carbohydrates. Bananas are an unprocessed, whole food with a good source of potassium.

Almond meal tends to be coarser than flour, but you can often use it in the very same way. It also happens to have the same carb count and nutritional value as almond flour.

What has more carbs a donut or a muffin? ›

It's time for a food face-off. When it comes to calories, carbs, and sugar, there's a clear winner: doughnuts. The fried rings have 155 fewer calories, half the carbs, and 21 fewer grams of sugar than muffins.

How is almond flour low-carb? ›

It's made simply from crushed almonds and is extremely low in carbs, containing only 3 grams of total carbs and 1 gram of net carbs per 2-tablespoon (14-gram) serving ( 3 ). You can use almond flour as a 1-to-1 substitute for wheat flour in baking, but baked goods containing almond flour tend to be a little spongy.

    What causes sunken muffins? ›

Muffin was underbaked and cell structure wasn't set. When the cell structure doesn't set, the air spaces created by the leavening in the recipe collapses, causing the muffin to sink. Oven temperatures vary over time. To insure the correct temperature each time you bake, always use an oven thermometer.

Why did my muffins sink while baking? ›

If you beat too much, you will end up incorporating way too much air into the batter, and when the cupcakes bake, they will rise rapidly and then collapse.

Why did my almond flour cake fall? ›
